At least we'll have corn...

Last week we put up 107 pints of sweet corn.  Yes.  One-hundred and Seven.  That means we will be able to eat yummy sweet corn twice a week for the next year.  Does a family of seven really need that much frozen corn?  I'm not sure.  But we had fun putting it up, from start to finish!

A family in our church allowed us to pick as much corn from their family's sweet corn rows that we wanted.  And since we never turn away free food, Lige took the kids to pick a truck-load.  That was AFTER he had already picked some the day before.  Amana was the biggest help picking it right from the stalks.

Ten gallons of corn ready to blanch.  By this time, we already had 36 bags in the freezer.  Not nearly enough. :)
Lige set up a corn shucking station outside.  It also became a "cut kernels off the cob" station and a "show me your silliest face" station.
This is what you have left when you finally finish shucking a bazillion ears of corn.
I cooked one batch at a time, in halves so it would blanch faster.  Since it was already 100 degrees in the kitchen before we started, by the time we were done it was about 189 degrees.
Preparing food for the winter makes me feel very domestic and old fashioned.  It's hard work, but it's fun for me too.  By the end of the day, both myself and my kitchen were covered in corn.  (which I cleaned up before bed!)  Our freezer smells like corn.  And there's a good chance that if you come for a meal you will be served...corn!
